Largest Prosperity Salad Toss

Prosperity Salad Toss (or Yúshēng (余升)) is one of the most anticipated festive dishes of the Chinese New Year. Traditionally it consists of strips of raw fish (generally salmon), mixed with shredded vegetables and a variety of sauces and condiments, among other ingredients. Yúshēng (余升) literally means "raw fish" and since "fish" is commonly linked to its homophone "abundance (余)", Yúshēng (魚生) is interpreted as an increase in abundance. Therefore, yusheng is considered a symbol of abundance, prosperity and vigor.
When the salad is tossed into the air, guests exclaim ‘prosperity’ and other good fortunes. The Prosperity Salad Toss at Westfield Chatswood will be the largest of its kind, with 88 people invited to participate.
